Saucy’s Pad Thai

Part 1: Protein Time

Ingredients

MEAT

1 lb – Chicken breasts, boneless (& skinless)

Note: quality of chicken breasts really matter here. So try to splurge and get the fresh organic stuff. 

PRODUCE

3 – Chopped Garlic Cloves

2 Shallots

Cooking the Chicken

  1. Unpack and clean chicken

  2. I typically buy thick Chicken Breasts so I cut each piece in half. Thus, giving me TWO fillets from one large breast.

  3. Season chicken with salt, pepper, and red pepper flakes, to your own taste of course

  4. Chop up some Garlic and shallot

  5. On a medium heat pan add a generous amount of Olive Oil (enough to cover the pan) and add your garlic and shallot

  6. Let it simmer to a nice golden color

  7. Add the chicken

  8. Place lid over pan, flip chicken approx. every 5 minutes until fully cooked (should take approx. 15-20minutes depending on size of breasts)

Part 2: Let’s Get Saucy

Ingredients

PRODUCE

2-3 Freshly Chopped Garlic Cloves (1/2 tsp minced garlic is okay too, but fresh is always best)

1 tsp – Ginger, Fresh

CONDIMENTS

2 tsp – Hoisin Sauce

1/4 cup – Soy sauce, low sodium

1 1/2 tbsp – Peanut Butter (trust me on this)

1/4 cup – Fish sauce

BAKING & SPICES

3 tbsp – Brown Sugar

1 tbsp – Cornstarch

1/4 tsp – Red Pepper Flakes

3 tbsp – White Sugar

OIL & VINEGAR

3 tbsp – Rice Vinegar

Preparing the Sauce While Chicken Is Cooking

  1. In a large mixing bowl add the ingredients and mix with a fork or whisk

  2. Chop up 2 cloves of garlic

  3. Add the garlic to medium heat pot (small pot) with Extra Virgin Olive Oil

  4. Let it simmer until golden

  5. Lower heat and add sauce to pot

  6. Stir for 3-5 minutes and then set aside

Part 4: Pad Thai Noodles

Cooking the Noodles

  1. Take a large pot and boil some water

  2. Add a pinch of salt and oil to water

  3. Add noodles and be sure not over cook them! Cook as instructed on the packaging of the noodles. Typically noodles are cooked within 7minutes.

Part 5: Putting it All Together

  1. Get a large pan or wok

  2. Place cooked noodles in pan or wok

  3. Add sauce

  4. Slice chicken and place on top

Crushed Peanuts

Lime Wedge

Sliced Jalapeños

Onions

I didn’t add any of the quantities because it all depends on what you like most. Every time I make this dish, I have different requests i.e. no bean sprouts or peanuts. But to get the full flavor of Saucy’s Pad Thai, I say add a handful of all the produce and 2 lime wedges. Yummy!
