Broccoli & Chz Soup

1/2 stick of unsalted butter (56.7g)
6 oz (170g) Cheddar, shredded
4 oz (113g) White Sharp Cheddar, shredded
2 Cups (240g) Heavy Whipping Cream
G R A I N S
1 loaf of Italian White Bread, uncut loaf for the bread bowl
P R O D U C E
1/2 medium yellow onion, chopped
2-3 garlic cloves, minced
1 Large Head of Broccoli, 3-4 florets
1 large Carrot (Julienned)
P A N T R Y I T E M S
Kosher Salt, taste
Black Pepper, to taste
1/4 tsp paprika
O T H E R
4 tbsp AP Flour
I N S T R U C T I O N S
Melt Butter in large pot over medium-high heat
Add onion and cook until golden
Add garlic and sauté
Add flour and whisk until gold in color and smells like popcorn
Gradually pour hot chicken stock in mixture till it comes to sauce consistency
Add steamed or roasted broccoli, carrots and seasonings
Bring to a boil then reduce heat to medium-low and allow to it simmer for approx. 15 min
Gradually stir in heavy cream and cheese until fully melted
Taste and adjust seasoning if needed
Take loaf of bread and cut a small , deep circle in the center
Hollow out the bread and save bread for croutons or for soup
Place bread on plate and pour delicious soup inside, garnish with more cheddar and enjoy!
